BBQ Bliss


As we head into the long awaited summer BBQ season, our Head Chefs Ebbi and Dylan have given us a recipe for an all-purpose BBQ rub to get things started.
BBQ rub recipe
This works particularly well with all meats, salmon, monkfish and cod.

4tbsp salt flakes
4 tbsp paprika
3 tbsp garlic powder
2 tbsp onion powder
4 tbsp soft light brown sugar
2 tbsp chipotle chilli powder
2 tbsp coarse ground black pepper
1 tbsp celery salt
2 tbsp ground cumin seeds
2 tbsp ground fennel seeds
2 tbsp ground allspice

Mix all of the ingredients together in a bowl. Sprinkle the rub over the meat, either a whole piece or portioned, and really massage it in. Leave the meat to rest for at least an hour before cooking. If any of the rub is left over, store it in a glass jar or air tight container for the next time the sun comes out!
