After sharing our delicious breakfast granola with some of our venue teams last year, we received lots of requests for the recipe so they could make their own.

Turning breakfast into a treat
With many of us working from home, we are missing popping into a coffee shop for a delicious breakfast treat on the way to work, so we are having to substitute with our own treats.

Breakfast is said to be the most important meal of the day and it’s very easy to make a delicious and nutritious bowl of goodness that will stave off any hunger pangs until lunchtime.

Flexible options
Homemade granola offers fantastic flexibility, allowing you mix ingredients as you wish according to seasonality or availability.

Below we have set out a recipe for a nutritious Spring/Summer breakfast granola which is packed full of serotonin-inducing ingredients to help you stay happy and healthy, plus an Autumn/Winter version that you can try later in the year.

Breakfast granola recipe – Spring/Summer
300g gluten free jumbo oats
Part 1
120g honey
40g date molasses
60g coconut oil
Part 2
50g freeze-dried strawberry (chopped in half)
50g freeze-dried raspberry (leave whole
50g pecans (roughly chopped in half)
50g almonds (roughly chopped in half)
20g hazelnuts

Preheat your oven to 170 degrees. Place all of the ingredients from Part 1 into a saucepan and simmer until it has all melted.

Stir the mixture into the oats and chopped nuts. Once the oats have been well coated, place them into a large baking tray and pop them into the oven for 15-20 minutes, stirring well every 5 minutes to stop the mixture from sticking to the bottom of the pan. Once the granola mixture has turned golden, remove it from the oven.

Whilst it is cooling, mix every 5-10 minutes to stop the mixture forming lumps and sticking together. Repeat this until the mixture is almost cold.

Air-tight jars of granola deliciousness

At this point, add the fruit (alternatively, if you are using dried fruit, you can mix it in with the oats before baking). Once the granola has cooled completely, place in an airtight container to keep it fresh.

Serve it up
Enjoy the granola with fresh banana slices, blueberries and/or goji berries, topped with a big dollop of your choice of yoghurt or milk (we love vegan coconut yoghurt with a splash of water).

Breakfast Granola Recipe – Autumn/Winter
Create your Autumn/Winter breakfast granola using the same method and ingredients as above, but substitute the dried strawberries/raspberries with the following items:
50g dried cranberry
50g dried apricot
25g Coconut flakes
Ground cinnamon to taste

The Autumn/Winter breakfast granola is absolutely delicious served with soft banana chips, toasted pumpkin and sunflower seeds and your choice of milk or yoghurt.

Sometimes, particularly in the current circumstances, it can be tricky to source all of the ingredients for the recipe. The beauty of the granola is its flexibility, as you can substitute the majority of the ingredients with alternatives.

Maple syrup is a fantastic replacement for honey and/or date molasses. You can replace our choice of nuts and fruits with any others you may have in your cupboard. It’s fun to experiment and find out which combination you like best. We are particularly fond of chopped dates!

Topping the granola with frozen fruit is a practical way to add freshness when it can be tricky to get hold of fruit on a daily basis.
